Hey Y’all! Happy Wednesday! We just got back from Jackson Hole late last night, and we were so excited to share and talk about our trip that we just couldn’t wait any longer! We explored Grand Teton and Yellowstone National Parks, but today I am going to tell you all about our time in Jackson, Wyoming! We like to travel for our birthdays, so Allix (my bestie and our roommate) wanted to be in nature so this trip was all for her big 25th celebration!

I wasn’t really sure what to expect from Jackson. The last time we were there I was 3 years old. I knew it was a really small town, and very popular in the winter for skiing and the summer for the national parks. April is what they call “shoulder season” because winter activity had ceased, and summer hasn’t started yet. Unfortunately, that meant that a few places were closed or had weird hours. I had done tons of research on restaurants before our trip and I was very pleasantly surprised by the offerings downtown. I am jaded by New York because we have absolutely everything and lots of healthy options. I never in a million years thought that a tiny little ski town would some really incredible restaurants and healthy options as well.

As soon as we landed in Jackson, we hit the ground running. By the way, the Jackson Hole airport is in Grand Teton National Park and it has the most incredible view you have ever seen. We headed downtown before checking into our hotel because this was pretty much our only day to explore Jackson because our schedule was pretty tight. We headed straight to Persephone Bakery to have a snack and a coffee pick me up. Ashley had a cauliflower salad and I had a coffee and cheddar biscuit. Pro tip, they have almond milk at all of the coffee shops in Jackson which made me really happy.

After we had some energy back we walked all around downtown to do a little shopping. We all picked up some t-shirts and little souvenirs. It was the perfect way to spend the day acquainting ourselves with the town. The views are incredible as well! You are surrounded by mountains every way you look.

We ate lunch in the park the next two days but we had three amazing dinners in Jackson. The first night we ate at The Merry Piglets. We wanted to eat at Lotus, but because of the shoulder season they weren’t open for dinner. The Merry Piglets was a tex mex place and it was very yummy! We skipped the margs, but had some awesome veggie tacos and guacamole.

Our 2nd night in town we ate at Trio and It was my absolute favorite! Ash and I both ordered pizzas and they were fantastic! We also had their woodfire grilled s’more for dessert and it was amazing! My mouth is watering right now just thinking about it.

For Allix’s birthday dinner we went to Local which is a steakhouse, but we are all mostly vegetarian. I feel like that could be some sort of joke; “When three vegetarians walk into a steakhouse…..”. It was actually so good! Ashley got a pasta dish that she really enjoyed, and I opted for 3 sides, which were huge portions by the way. I got the brussel sprouts, truffle mac & cheese, and their sweet potato gratin. Carb overload, but so so worth it!

After exploring Yellowstone all day we headed back to Jackson and picked up some coffee from Cowboy Coffee! It was so yummy and the perfect pick me up. We love trying local coffee shops as you all know! 

We highly recommend all of the places we ate at. I have to say, one of my talents is picking amazing restaurants when we travel. Ashley can attest to that fact!

For accommodations we stayed at The Lodge at Jackson Hole. It was very reasonably priced and had great reviews, so I knew we would have a great time. They offered complimentary breakfast and had a spa which was perfect because we all knew we wanted to get massages while we were there. The room was very spacious and was perfect for the time we were there. We also really loved all of the bear statues that they had placed around the property. The hotel wasn’t downtown but was less than a mile away. We rented a car for our trip so that was no issue for us.

We had such a fun time in Jackson, but we can’t wait to share our experiences in Grand Teton and Yellowstone! Even though we had been before, we were blown away by the parks and all of the nature and wildlife! It’s seriously so beautiful and you should definitely take a trip there if you have a chance.
