Peanut butter balls, better known as “buckeyes”, have been a staple in our house since I can remember. We usually make them a little closer to Christmas but I couldn’t help myself. I had to get started on them early. These are actually so simple, but they take a lot of patience. I mean a loooooooooooot. Imagine smelling sugary buttery peanut butter for 5 hours straight and not being able to eat it. Okay that might be a tad bit dramatic, but I have pretty much zero patience. Just ask my mom, she will concur.
You will need:
3 lbs of powdered sugar
1 lb of softened butter
2 lbs of peanut butter
24 ounces of chocolate chips
1/2 block of paraffin wax
Now, stay with me. I know that this sounds like a lot of ingredients but those measurements make 150 balls. You can adjust the recipe for your needs very easily.
Pour the powdered sugar, peanut butter, and softened butter in a large bowl and mix with your hands until it forms a dough.
Then, form balls and place on wax paper lined pans. Now here is where it gets tricky. If you have space in your fridge you ideally want to put them in there for two hours to harden. If you don’t, then leave in the coolest place you can until they are formed enough to be able to dip in melted chocolate. This sole reason is why we always make them at Christmas. We wait for it to be cold outside so we can set them in the garage to harden. Unconventional, but it totally works.
You then want to melt your chocolate and paraffin wax in a double boiler then use your preferred dipping method to cover your peanut butter balls. I’m not going to lie, they are not the prettiest like this. You can always melt a colored chocolate to drizzle on top to make them festive. They are tasty though!
These are one of my favorite treats, and making them got me in such a Christmas festive mood. I’m already bugging Ashley about putting the Christmas decorations up. She is conveniently ignoring me. We will see who wins this one right Ash!? 😉
