Cinnamon Butterscotch Cookies

I made these cookies for a cookie exchange we hosted last year, and when planning for the holidays this year, these cookies were the only thing Shelby requested. Ok, maybe not the only thing, but definitely one of the top three. I realized I never shared the recipe, so I wanted to be sure to rectify that. These cookies have the perfect combo of sugar and spice. You can leave them plan or decorate them. We opted to dip half the cookie in white chocolate and decorate with sprinkles. I bet they would also be delicious drizzled with dark chocolate. Something to try next time…

Cinnamon Butterscotch Cookies

Ingredients:

2 1/4 cups flour

1 tsp baking soda

1 1/2 tsp cornstarch

1/2 tsp salt

1/2 tsp nutmeg

1 Tbs cinnamon

1 egg + 1 egg yolk

2 tsp vanilla

3/4 cup butter, melted

3/4 cup brown sugar

1/2 cup sugar

1 1/2 cups butterscotch chips

Optional:

11 oz bag white chocolate chips

1 Tbs vegetable shortening

In a large bowl, whisk together the flour, baking soda, cornstarch, salt cinnamon, and nutmeg. set aside. Then, in a medium bowl, combine the melted butter and sugars. Then mix in the egg and egg yolk. Finally, whisk in the vanilla. Pour the wet ingredients into the dry and mix well. Finally, fold in the butterscotch chips. Cover the dough and chill for at least 2 hours. 

Cinnamon Butterscotch Cookies

After dough has chilled, roll into balls and bake at 325 degrees Fahrenheit for 12 – 14 minutes. Let cool.

Melt the white chocolate chips with the vegetable shortening. Dip half of the cookie, then let cool and firm.
