Happy Friday! We went apple picking a couple weeks ago and came home with a plethora of apples. We quickly realized we had way too many than we could handle, so the only think we thought we could do with the apples is bake them. Enter our apple pie cupcakes. These turned out great, and honestly more muffin like, so we can eat them for breakfast.
You Will Need:
3 Cups Flour
1 Cup granulated sugar
1/2 Cup light brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
3 Eggs
1 Cup of Vegetable Oil
1/2 Cup sour cream
2 teaspoons vanilla extract
2 Cups chopped apple
Combine your dry and wet ingredients separately, then mix together. Make sure you watch our YouTube video on Sunday to see every step!
Bake them at 350 degrees Fahrenheit for 18-20 minutes.
For the Brown Sugar Buttercream Frosting
You Will Need:
1 Cup softened butter
3 Cups Powdered Sugar
1/2 Cup light brown sugar
1 tsp cinnamon
1 tsp vanilla extract
2 tbsp of milk
Combine all but powdered sugar, then add sugar slowly. Again, you can see all of the steps in our YouTube video!
