Our Journey of Plant-Based Eating
Hey hey hey!! Wow it’s been a bit since we have had some time to write a blog post. We’ve made some changes to our structure over here at As Told By, but don’t worry we are not going anywhere. We don’t want to stick to a strict schedule, so we decided that we are going to jump on with blog posts when we want to. The same will go for our Youtube channel. In the meantime though you can follow both Ashley and I on Instagram. We decided to split our accounts into two separate ones and so far the feedback has been amazing! We post on there every single day, so you won’t miss us over here twice a week!
We’ve made some changes in our personal lives as well. We’ve changed our workout schedules and our eating habits. I will let Ashley fill you in on her in a few weeks, but I have decided to be plant-based and gluten free. Let me just say though, I will give in a little bit when we are traveling, and other circumstances. Hi, I love queso and can’t say no, but it will be a very rare thing when I’m in Texas. We are now on a mission to find restaurants in New York that are Vegan & Gluten Free. First up on our list was Broken Coconut. I came across this place on Instagram (shocker hahah) but I saw it and knew we had to stop by.

Bonus* There are several spots to take some IG pics. I ordered the Açai bowl and the vegan banana bread (not gluten-free, but this was my last big gluten bite) and Ashley ordered the Blueberry Cobbler which was chia oatmeal with blueberries. She also got the undefeated drink that was almond milk, protein, cacao and peanut butter. I had a few sips and let me tell you it was awesome!
