I know what you are thinking…Shelby it’s July, why are you talking about Rum balls!? Let me take it back. I’m fully aware that rum balls are usually a winter snack, but with all of the rum we consumed in Turks & Caicos, I was looking for something to incorporate them in. Rum balls are so quick and easy and taste delicious.
All you need is:
- 1 box of vanilla wafers
- 1 cup confectioners sugar
- 1/4 cup unsweetened cocoa powder
- 1/3 cup light or dark rum
- 1/3 cup light or dark corn syrup
Mix all of the dry ingredients, then add the wet ones, and voila you are done!
Roll them into individual sized balls and coat in powdered sugar. Store in the refrigerator so they can harden.
See how easy they are! They don’t have to be eaten around Christmas time. They can be enjoyed all year long. I’m not going to tell you how many I can eat in one sitting. You will either be highly impressed, or equally disgusted.
