I just want to start this post by saying that I am a chocolate and sweets addict. So much so, that it got to a point where I needed to come up with alternatives because my waist size and my intestines did not like me very much. I am lactose intolerant and allergic to soy, which makes buying sweet treats out quite difficult. In the past I have just endured the pain, but I have finally come up with a few recipes that my stomach, and I hope yours, very much enjoys.
Right now we are currently in Iceland, and are having the best time ever. It’s so breathtaking. We can’t wait to come back and show you all of our pictures, but make sure you are following us on Instagram for sneak peeks.
You will need (serves 3):
Three 5.4 oz cans of chilled coconut cream
3 Tbps raw cacao powder
2 Tbps agave nectar
Cacao nibs to top
*You could also add almond, vanilla, or peppermint extract to taste
Whip the chilled coconut cream until light and fluffy, then add the cacao powder and agave nectar. Whip everything until an airy texture. Separate into individual bowls and chill for 3-4 hours. Once chilled top with your cacao nibs or your favorite toppings and enjoy!
This is one of my favorite quick and easy desserts. It’s actually quite filling as well which is great. You don’t walk away feeling like you need anymore sweets.
