Today I thought I’d share one of my easy go to recipes for a quick lunch or dinner. This meal is usually something I whip up if i want a hearty lunch, or is my go to dinner if I’m making something for just me. It’s very filling and satisfying to this non-meat eater, but could just as easily be a side to your protein of choice, or would also be great served over some pasta.
Ingredients:
1 and 1/2 cups of cherry tomoatos
1 can cannellini beans
1 clove garlic
Basil
Oregano
Directions:
1. Mince the garlic and throw in a pot with some olive oil.
2. Cut the tomatoes into bite size pieces. I had some small heirloom tomatoes on hand, but any kind of cherry or grape tomatoes would work. Throw the tomatoes into the pot with the garlic and let them cook down over medium heat stirring occasionally for about 10 minutes.
3. Drain and rinse the beans and add them to the pot, heating until warm.
4. Remove the pot from the heat and tear in some fresh herbs. I used basil and oregano, but use whatever you like. If you use dried herbs add in step 1.
5. Top with some grated parmesan cheese, some fresh cracked black pepper, and a drizzle of balsamic vinegar.
