Almond Hot Chocolate

What’s going on with the weather in New York lately? We went and visited the tree in Rockefeller Center yesterday and it was almost 70 degrees outside! I can’t recall a time in recent years where I’ve been out and about in the city in December without a coat. Or seen the tree when it’s not snowing outside. It’s very bizarre. Regardless of the temperature outside, Christmas is only 11 days away, so even though it may not feel like Christmas outside, dig deep and find your holiday spirit. One of my favorite things about winter are the endless supplies of hot chocolate. Who doesn’t love playing in the snow and then coming inside to warm up with a steaming mug of hot chocolate?! Some of the best hot chocolate we’ve ever had is the almond hot chocolate from a booth at the Bryant Park Winter Village. Inspired by the deliciousness, Shelby and I decided to create our own version, at it’s pretty tasty.

Almond Hot Chocolate

Ingredients:

2 cups milk (I used vanilla almond milk)

1/2 cup of your favorite hot cocoa mix (we love this one)

1 tsp cinnamon

1/4 tsp vanilla extract

1/4 tsp almond extract

*makes enough for one large mug, or two smaller mugs

Almond Hot Chocolate

Pour your milk into a saucepan and turn on low to heat.

Almond Hot Chocolate

Whisk in the cocoa powder, cinnamon, vanilla, and almond extract. Simmer about 5 minutes to warm and let the flavors come together.

Serve in your favorite holiday mug and top with your go to hot chocolate toppings. I used whipped cream and sprinkles and hung a candy cane over the rim to get a hint of peppermint.
